Tasty Tuna Mousse

185 g Can tuna in brine, drained
2 tb Low oil mayonnaise
2 tb Lemon juice
1 sm Onion (80g), chop'd finely
1 Gherkin (30g), chop'd finely
1 tb Chopped fresh parsley
1 tb Tomato paste
1/2 ts Dry mustard
1/4 ts Sugar
3 ts Gelatine
2 tb Water

Blend or process tuna, mayonnaise, lemon juice, onion and gherkin until smooth. Add parsley, tomato paste, mustard and sugar, process until combined. Sprinkle gelatine over water, dissolve over hot water (or microwave on HIGH for about 20 seconds). Stir into tuna mixture.

Rinse 4 individual half cup capacity dishes; do not dry dishes. Divide mixture evenly between dishes; cover, refrigerate several hours or overnight.
