Tuna Patties

1 large egg
1 Tbsp. all-purpose flour -- plus
1 teaspoon all-purpose flour
2 ounces tuna in water -- drained
1/2 teaspoon dried parsley
1/4 cup diced tomato
1 dash black pepper
1/4 cup mushroom -- chopped
2 tablespoons green onion -- sliced

Beat egg and add remaining ingredients. Add 1 or 2 tsp water if it seems too dry. Shape into 2 patties. Spray medium nonstick skillet w/ Pam. Heat skillet over med-high and add patties. Cook until golden brown, turn and cook until golden brown. Makes 1 serving.
