Tuna and Rice Quiche

1 (10 oz.) pkg. frozen chopped broccoli
1 1/2 c. cooked rice
3/4 c. (6 oz.) shredded Cheddar cheese
3 eggs
1/3 c. skim milk
3/4 tsp. salt
1 (6 1/2 oz.) can water-packed tuna, drained


Microwave (high) broccoli in paper package (remove foil wrap, if necessary) 5 to 6 minutes or until just about tender. Drain. Combine rice, half the cheese and 1 egg. Press evenly into bottom and 1/2 inch up sides of 9-inch microwave-safe pie plate or quiche dish. Beat remaining 2 eggs with milk and salt. Top rice mixture with broccoli and tuna; mix lightly. Pour egg mixture over tuna. Microwave (high), uncovered, 8 1/2 minutes, rotating dish once. Sprinkle with remaining cheese. Microwave (high), uncovered, 1 to 2 minutes or until center is just about set. Serve cut into wedges. Rice makes the crust for this easy quiche.
