Crunchy Tuna Salad

1 can solid white tuna in water drained and flaked
1 can water chestnuts -- drained, chopped
1 cup celery
1/2 cup carrot
1/4 cup green onion
1/4 cup low calorie mayonnaise
1 tablespoon Dijon mustard
1 teaspoon soy sauce
1/4 teaspoon pepper


In large bowl, combine all ingredients. Cover and chill.

Line two plates with lettuce.

Spoon half of tuna salad onto each plate.

You can use low fat yogurt in place of mayonnaise.
