Good Friday Casserole

1 small onion, chopped
1/4 cup margarine
1/4 cup flour
2 cups milk
1/3 cup mayonnaise
2 Tbsp. prepared mustard
Salt & pepper
1 (10 oz.) frozen cauliflower, thawed and cut up
1 (6 oz.) can Tuna, undrained
1/4 lb. egg noodles, cooked
1/2 cup red pepper, chopped
1/2 cup green pepper, chopped
Bread crumbs


In small saucepan, saute onion in butter until tender. With a whisk, blend in flour. Gradually stir in milk and cook until sauce thickens, stirring constantly. Remove form heat and blend in mayonnaise, mustard, salt and pepper. In a greased 2 quart glass casserole dish, combine the sauce, cauliflower, Tuna noodles and peppers. Sprinkle with bread crumbs on top. Bake at 350 F for 35 minutes.
