Puffy Tuna Casserole

2 (6 1/2 oz.) cans of Tuna
2 eggs, well beaten
1 can of mushroom soup*
1 cup soft bread crumbs
1/2 Tbsp. minced parsley
1 tsp. minced onion
1 Tbsp. lemon juice
1 Tbsp. butter


Flake Tuna, set aside. Stir together all other ingredients except bread crumbs. Mix well. Then blend in Tuna and bread crumbs. Spoon into a greased casserole dish (2 quart) or a 9 x 9 x 2 inch square pan. Bake in a 350 degree oven for 45 minutes or until firm. It may take longer.


*1/2 can of soup plus 1/2 cup of condensed milk may be used.
