Vegetable tuna Souffle

4 Tbsp. butter
4 Tbsp. flour
1 cup milk
6 eggs, separated
1 cup cooked vegetables, drained and well chopped
2 Tbsp. chopped onion
1/4 cup chopped, drained tomato
1/2 cup drained, flaked Tuna
4 Tbsp. grated Cheddar cheese
Salt, pepper, cayenne to taste

Heat butter in pan, stir in flour, add milk. Heat, stir until thick. Remove from heat. Beat in egg yolks one at a time. Add drained, chopped mixed vegetables, onion, tomato, Tuna, cheese and seasonings; stir to combine and set aside.

Beat egg whites until stiff. Fold gently into yolk mixture. Pour into greased souffle dish. Bake at 350 F until puffed and brown, about 35 minutes. Serve immediately.
