Vegetable tuna Souffle

2 Tbsp. butter
2 Tbsp. flour
1/2 cup milk
3 eggs, separated
1/2 cup cooked vegetables, drained and chopped
1 Tbsp. chopped onion
1/8 cup chopped tomato, drained
1/4 cup drained flaked Tuna
2 Tbsp. grated cheese
Salt, pepper, cayenne

Heat butter in pan; stir in flour. Add milk. Heat, stirring constantly, until smooth and thick. Remove from heat. Beat in egg yolks one at a time. Add drained and chopped vegetables, onion, tomato, Tuna, grated cheese, seasonings to taste; stir to combine.
