Tuna Stuffed Zucchini

3 large or 6 medium zucchini
1 (7 1/2 oz.) can Tuna
3 Tbsp. Parmesan cheese
3 Tbsp. chopped parsley
Salt and pepper to taste
1 1/2 cups tomato sauce or spaghetti sauce
1/2 cup buttered bread crumbs, for top
Shredded Mozzarella, for top

Cut zucchini lengthwise, remove seeds. Parboil in a large pan of salted water. Test for doneness with a skewer. Combine Tuna, egg, salt, pepper, Parmesan, parsley. Stuff zucchini. Place in greased oven dish, top with tomato sauce, bread crumbs and Mozzarella. Bake at 300 F for about 20 minutes. To serve cut in smaller pieces.
