Tuna Potato Quiche

1 ready made 9 inch deep dish pie shell
2 medium potatoes, peeled and quartered
1 (7 oz.) can Tuna, drained
2 eggs, beaten
1/2 cup mayonnaise
1/2 cup chopped onion
1 (4 oz.) can mushroom pieces, drained
1/2 cup sliced scallions
2 Tbsp. flour
1 (8 oz.) package Swiss cheese (muenster may be substituted)
Salt and pepper to taste


Prepare pie shell as directed. Cook potatoes in salted water until tender, mash and combine with next seven ingredients. Add 3 slices of cheese, shredded. Pour into pie shell. Top with remaining cheese. Bake at 350 F for 40-45 minutes.
