Tuna Muffins

2 cups cooked rice
1 cup shredded Cheddar
6 1/2 oz. can Tuna
3/4 cup sliced black olives
4 Tbsp. chopped onion
1 Tbsp. parsley
1 tsp. seasoned salt
3 beaten eggs
4 Tbsp. milk

Butter Sauce:
1/4 cup melted butter
1 Tbsp. lemon juice
1/2 tsp. seasoned salt
1/2 tsp. parsley

Combine rice, cheese, Tuna, olives, onion, parsley and seasoning salt. Stir together eggs and milk; add to rice mixture.

Spray muffin tins with no-stick cooking spray and divide mixture between tins. Bake at 375 F for 15 minutes or until lightly browned. Or, bake in a cake pan and slice in squares. Serve topped with warm butter sauce. (Also very good made with chicken.)
