Tuna Melt Croissants

6 1/2 oz. can water packed Tuna, drained
1/2 cup chopped celery
1/2 cup chopped onion
1 egg, hard cooked & finely chopped
1 scallion, finely chopped
1 Tbsp. pickle relish
1/4 cup mayonnaise
Salt & pepper
2 croissants, sliced in half or 4 slices bread
1 slice American cheese, cut into strips


Combine first 7 ingredients in a mixing bowl. Add salt and pepper to taste. Cover bottom half of each croissant with half the mixture. Top each portion with half the cheese strips and add top half of croissants. Wrap each sandwich in sheet of paper towel. Put on plate and microwave on high for 45 seconds to 1 minute, until cheese is melted and Tuna is thoroughly warmed.
