Tuna Cucumber Mousse

1 envelope unflavored gelatin
1/4 cup cold water
1 can condensed cream of chicken soup
1 (7 oz.) can solid pack or chunk Tuna
1/4 tsp. onion powder or 1/2 tsp. grated onion
1/4 tsp. salt
2 Tbsp. lemon juice
1/3 cup mayonnaise
1 1/2 cups grated unpeeled cucumber


Soften gelatin in cold water. Heat 1/2 of the can of soup in pan to boiling point. Add gelatin and stir until dissolved. Add remainder of soup. Beat up fish and fold in with the onion, salt, and lemon juice. Add mayonnaise and cucumber.


Mix well and pour into 1-quart fish mold or in individual molds. Chill until firm; unmold and serve on salad greens with lemon wedges. Also excellent made with cubes of cooked chicken.
