Tuna Croquettes

2 Tbsp. butter
2 Tbsp. flour
1/4 tsp. salt
Dash pepper
1/2 cup milk
3 Tbsp. grated onion
1 can Tuna, drained
2 cups cracker crumbs
4 eggs, slightly beaten

Melt butter; remove from heat. Stir in flour, salt and pepper; mix well. Add milk; stir constantly. Cook until thick, stirring constantly; cool. Shape into oblong croquettes, using 1 tablespoon Tuna mixture each. Roll in cracker crumbs; dip in eggs. Roll in crackers again. Place on tray; cover and chill thoroughly. Fry at 375 F until brown, drain on towels. Serve hot.
