Tuna Croquette

1 can (7 oz.) Tuna
3 Tbsp. flour
2 Tbsp. butter
1 tsp. lemon juice
1/2 cup milk
1 cup bread crumbs
1 egg, slightly beaten


Drain Tuna and flake. Mix in lemon juice. Melt butter and blend in flour to make a thick white sauce. Add to Tuna mixture. Mix well. Chill one hour or longer. Shape into croquettes. Place croquettes in egg then bread crumbs, repeat once more. Place on plate. Chill 1/2 to 3/4 hour. Fry in deep fat until golden brown. Make medium white sauce (with a lot of cheese). Pour over cooked croquettes.
