Tuna Bake

4 Tbsp. butter
1/2 cup chopped green pepper
1 tsp. salt
1 Tbsp. flour
1/2 tsp. pepper
1/2 cup milk
1 egg, slightly beaten
1/4 cup sour cream
1 1/2 cups LaChoy chop suey vegetables, rinsed and drained
1 (6 1/2 oz.) can Tuna fish, drained and flaked
1 cup crushed chow mein noodles

Melt 2 tablespoons butter in saucepan. Add green peppers, chopped, and cook 2 minutes. Blend in flour, salt, and pepper. Gradually add milk and cook, stirring until slightly thickened. Blend together egg and sour cream, stirring into sauce. Add vegetables and Tuna. Turn into 1 quart baking dish. Bake at 375 F for 25 minutes. Melt 2 tablespoons butter. Add noodles and stir until heated. Sprinkle on top of Tuna; bake before serving.
