Tuna and Zucchini Patties

1/2 cup chopped onion
1 Tbsp. margarine
1 (6 1/2 oz.) can Tuna, drained and flaked
1 cup shredded zucchini
2 slightly beaten eggs
3/4 cup seasoned bread crumbs
1/3 cup parsley
1/8 tsp. pepper
2 Tbsp. cooking oil


Cook onion in margarine until tender but not brown. Remove from heat. Add Tuna, zucchini, eggs, 1/2 cup bread crumbs, parsley and pepper. Stir until combined. Shape into six 1/2 inch thick patties; coat with remaining crumbs. Heat oil in pan. Cook patties over medium heat about 3 minutes per side or until golden brown.


Makes 3 servings
