Tuna and Cheese Beanburgers

5 Tbsp. oleo
1/2 cup chopped onion
1 (16 oz.) can red kidney beans, drained
2 cups fresh bread crumbs (4 slices)
1 egg, well beaten
1/2 cup chopped sweet gherkins
1 (6 oz.) can Tuna, drained and flaked
Salt and pepper
Flour
6 slices American cheese


Melt 1 tablespoon oleo in a saucepan over low heat; add onion and cook until tender. Mash kidney beans in a large bowl; add onion, bread crumbs, egg, gherkins, Tuna, salt and pepper, mix well. Shape Tuna mixture into 6 patties and dredge in flour.


Melt the remaining oleo in skillet. Add patties and cook on both sides until browned. Place 1 slice cheese over each pattie; cover and cook until cheese is melted.
