Tasty Tuna Loaf

2 cups Tuna, drained
1/4 cup dry eggs
3/4 cup evaporated milk
1 Tbsp. chopped onion
1 Tbsp. lemon juice
Pepper to taste
1/2 cup crushed cereal


Add milk to egg gradually and mix well. Add cereal crumbs and soak for 5 minutes to soften cereal. Drain Tuna and mix with milk mixture. Add lemon juice, onion, and pepper. Blend well. Bake in greased loaf pan at 350 F for 40 minutes, until firm in center.


Serves 6.


VARIATION:


Use 1 tall cup of Salmon instead of Tuna. Take off the Salmon skin but mash bones in with the meat to add calcium.
