Tuna Loaf

1 (12 1/2 oz.) can Tuna, drained (1 can boned Salmon may also be used)
3 cups soft bread crumbs
3 eggs
2 Tbsp. minced onion
1 scant Tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 (4 oz.) carton sour cream
1/2 (4 oz.) jar diced pimentos, drained (optional)

In large bowl flake Tuna; stir in bread crumbs, eggs, onion, lemon juice, sour cream and pimentos. Spoon mixture into well greased loaf pan. Bake at 350 F for 45 minutes. This may be served with a thin white sauce with 2 hard boiled eggs, chopped into it.
