Tuna Hot Dish

2 cups raw, diced potatoes
2 cups raw, diced carrots
16 oz. can peas
small can Tuna
2 Tbsp. flour
2 Tbsp. chopped onion
2 Tbsp. bacon fat
1 cup milk
Salt and pepper to taste


Make a sauce of 2 tablespoons each bacon fat, flour, and chopped onion; plus 2 cups liquid (the juice drained from the peas plus milk). Add to the sauce potatoes, carrots, peas, and Tuna; season to taste. Heat all ingredients through and turn into a greased casserole. Bake, covered, for 1 to 1 1/2 hours until vegetables are done (325 - 350 F).
