Manhattan Tuna Chowder

2 Tbsp. salad oil
1 small onion, minced
1 (28 oz.) can tomatoes in puree
1 (16 oz.) package frozen mixed vegetables
1/2 tsp. dried basil
1/2 tsp. sugar
1 (13 oz.) can Tuna


In 4-quart saucepan over medium heat, in hot salad oil, cook onion until transparent but not brown. Add next 4 ingredients and 1 1/2 cups water; heat to boiling. Over low heat, cover and simmer 10 minutes. Add drained Tuna; cook 5 minutes or until vegetables and Tuna are hot.


Makes 6 servings
