Tuna Loaf

4 Tbsp. butter
4 Tbsp. flour
1 tsp. salt
1/2 tsp. pepper
2 cups milk
2 (7 oz.) cans Tuna
2 Tbsp. lemon juice
1 cup cracker crumbs
1/2 cup chopped celery
1/2 cup chopped pimiento
2 Tbsp. chopped onion
2 eggs, slightly beaten


Melt butter in saucepan; add flour, salt and pepper. Add milk and stir until sauce thickens. Flake Tuna and add lemon juice. Add remaining ingredients and mix thoroughly. Combine sauce and Tuna mixture. Turn into buttered casserole and bake in 350 F until brown-about 45 minutes. Serve with cream sauce or cheese sauces.
