Seafood Thermidor

1/3 cup chopped green pepper
1/4 cup chopped onion
2 Tbsp. margarine
1 (10 oz.) can cream of potato soup
1/2 cup milk
1/2 cup shredded Cheddar cheese
1 can Tuna, boneless Salmon, Crab Meat or Shrimp
1 Tbsp. dry sherry or lemon juice


Cook green pepper and onion in margarine until tender. Add soup and milk. Cook and stir until hot. Add cheese and seafood. Stir and cook until cheese is melted. Add sherry or lemon juice. Serve over rice.
