Beneath The Sea Salad

1 (6 1/2 oz.) can white Tuna, drained
1 cup carrot, grated
1/2 cup celery, diced
2 Tbsp. grated onion (optional)
1 cup mayonnaise
1 (1 1/2 oz.) can shoestring potatoes, or 1 cup chow mein noodles

In a medium bowl, mix Tuna, carrots, celery, onion and mayonnaise together. Chill in refrigerator for 1 hour. Just before serving, stir in shoestring potatoes or chow mein noodles. Serve on top of lettuce.
