Fish Cakes

2 cups canned Tuna, drained
1 cup cooked brown rice or cracker crumbs
1 egg, beaten
1 small onion, minced
1 Tbsp. lemon juice
3 Tbsp. melted butter or unrefined vegetable oil
1 cup finely ground nuts


Combine all ingredients except nuts. Mix well and form into patties. Roll in ground nuts and place on oiled baking sheet. Bake at 350 F for 15 minutes or until brown and bubbly.


Serves 4-5
