Tuna and Caviar Parfait

4 oz Fresh ahi tuna; finely diced
2 ds Tabasco pepper sauce
1 tb Finely chopped chives
1 ts Olive oil
Salt and pepper to taste
Garnish:
2 oz Wasabi tobiko and/or osetra caviar
1 tb Whipped cream; unsweetened
8 Chives


In a well chilled bowl, mix tuna, Tabasco pepper sauce, chives, olive oil, and salt and pepper together. In a parfait glass, alternate layers of tuna mixture, wasabi tobiko and osetra caviar. Top with whipped cream and two chives.

Yield: 4 appetizer servings
