Impossible Tuna Pie

1 medium chopped onion
1/4 cup butter
2 (6 1/2 oz.) cans Tuna
1/2 tsp. salt
3 eggs
1 cup Bisquick
1 1/4 cups milk
1/4 tsp. pepper
2 cups shredded, processed cheese
2 tomatoes, sliced thinly


Preheat oven to 400 F. Spray 9 x 11 inch dish with Pam. Cook onions in butter until browned, stirring occasionally. Add well drained Tuna, 1 cup of cheese, and spoon into dish. Beat Bisquick, milk, and eggs with whisk until blended. Pour over Tuna mixture. Sprinkle on salt and pepper. Bake 25-30 minutes or until knife inserted in center comes out clean. Top with tomato slices and remaining cheese. Bake 2-3 additional minutes or until cheese melts. Cool before cutting, about 5 minutes.
