Escalloped Tuna

3 Tbsp. tapioca
1 1/2 cups scalded milk
1/4 tsp. salt
1/4 tsp. pepper
1 can flaked Tuna
1 beaten egg
1 stiff beaten egg white
4 Tbsp. cracker crumbs
2 Tbsp. butter


Add tapioca, salt, pepper to milk. Cook in double boiler 10 minutes; stir. Add Tuna and cook 5 minutes; remove from heat. Fold yolk into whites and combine with tapioca mix.


Pour into greased baking dish. Cover with cracker crumbs. Dot with butter. Bake at 350 F for 40 minutes.


Serves 4.
