Curried Tuna Salad

1 (7 oz.) can white Tuna, packed in water, drained
1 (8 oz.) can sliced water chestnuts, chopped
1 Tbsp. minced onion
1 tsp. lemon juice
1 tsp. soy sauce
1/2 tsp. curry powder
1/2 cup mayonnaise


Combine all ingredients and mix well. Chill overnight before serving.


Makes about 2 cups. This would be enough for 2 luncheon portions on lettuce leaves, or 6 sandwiches. (Try it on whole wheat with sprouts.)
