Chex Tuna Pie

1 egg, slightly beaten
1/2 cup mayonnaise or salad dressing
1/2 tsp. dry mustard
1/4 tsp. salt
Dash ground red pepper
1/4 cup chopped onion
3 Tbsp. chopped green pepper
1 1/2 cups Wheat Chex (crush chex to 1/2 cup)
1 can Tuna, drained
1 (10 oz.) package frozen mixed vegetables (cooked and drained)
1/2 cup shredded Cheddar cheese

Combine egg, mayonnaise, mustard, salt, pepper, onion and green pepper. Stir in chex crumbs. Mix in Tuna and press gently into 8 inch pie plate. Toss vegetables with 1/4 cup cheese. Turn into shell. Sprinkle remaining cheese over vegetables. Bake 25 minutes at 325 F or microwave on high for 5 minutes.
