Cheesy Tuna Rice Muffins

2 cups cooked rice
1 cup shredded cheddar cheese
1 (6 1/2 oz.) can Tuna, drained & flaked
3/4 cup black olives, sliced in thirds
1 Tbsp. instant chopped onions
1 Tbsp. parsley
1 tsp. seasoned salt


Combine above ingredients. Add 2 beaten eggs and 2 tablespoons milk. Mix thoroughly. Spray 6 muffin cups with Pam. Divide rice into cups. Bake in 375 degree oven for 15 minutes. Serve with Tangy Butter Sauce. Combine: 1 Tbsp. lemon juice 1/2 tsp. seasoned salt 1/2 tsp. parsley


Spoon over muffins.
